You will need:
- ½ cup cat milk.
- 2 tbsp olive oil.
- 2 free-range eggs.
- ½ cup of shredded, cooked salmon.
- A pinch of salt.
- 1½ cups self-raising flour, or 2 cups brown rice flour (this will make your cake wheat and gluten free).
Method:
1- Preheat the oven to 180°C/360°F/ gas mark 4.
2- Try to use fresh salmon; if you don’t have any fresh, use frozen. Make sure the salmon is cooked properly (for approximately 10 – 15 minutes); shred it once cooled. You could also use a food processor to mash the salmon.
3- For the cake, grease the cake tin and line with baking parchment.
4- Whisk the eggs, cat milk, and olive oil in a bowl using an electric whisk. Add the mashed salmon to the bowl and mix until light and creamy. Finally, fold in the flour.
5- Pour the mixture into the cake tin and place in the oven to bake for 25 – 30 minutes, or until completely cooked through. Test the cake is cooked by inserting a metal skewer into the centre of the cake; if it comes out clean, the cake is cooked.
6- Remove from the oven and leave to cool for five minutes, then remove from the tin and leave to cool on a wire rack.
7- Decorate with your cat’s favourite treats and serve once cooled.
